Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons soy sauce

2 tablespoons hoisin sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons vegetable oil

1/2 cup green onions, chopped

1 tablespoon sesame seeds (for garnish)

Cooked rice, for serving (optional)

Instructions

Marinate the Chicken: In a medium bowl, combine the chicken pieces with soy sauce, hoisin sauce, honey, rice vinegar, minced garlic, grated ginger, and cornstarch. Mix well until the chicken is evenly coated, and let it marinate for about 5 minutes.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

Cook Chicken: Add the marinated chicken to the hot skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add Sauce: Pour any remaining marinade from the bowl into the skillet, stirring it into the chicken. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Serve: Garnish with chopped green onions and sesame seeds. Serve the Mongolian chicken over cooked rice if desired.
