1 lb shrimp, peeled and deveined

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup buttermilk

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp Sriracha (or to taste)

Corn or flour tortillas (6-8)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Shredded cabbage (optional for topping)

Prepare the Shrimp: In a large bowl, combine the buttermilk, garlic powder, paprika, salt, and pepper. Add the shrimp, making sure they are fully submerged. Let them marinate for at least 30 minutes in the refrigerator.

    Set Up Breading Station: In one bowl, place the flour; in a second bowl, the beaten eggs; and in a third bowl, the panko breadcrumbs.
