Asado Chicken and Sauteed Lemon Zucchini

4 chicken thighs (bone-in, skin-on)

2 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Zest and juice of 1 lime

Salt and pepper to taste

2 medium zucchinis, sliced into half-moons

1 tablespoon butter

1 lemon, thinly sliced

Fresh parsley for garnish

Marinate the Chicken: In a large bowl, mix together olive oil, minced garlic, smoked paprika, ground cumin, dried oregano, lime zest, lime juice, salt, and pepper. Add the chicken thighs and coat them well. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

    Cook the Chicken: Preheat your grill or oven to medium-high heat. If using a grill, place the marinated chicken thighs on the grill and cook for about 6-7 minutes per side until the internal temperature reaches 165°F (74°C) and the skin is crispy. If using an oven, place the thighs on a baking sheet and roast them at 400°F (200°C) for around 30-35 minutes, or until cooked through and golden brown.

      Sauté the Zucchini: While the chicken is cooking, heat butter in a large skillet over medium heat. Add the sliced zucchinis and sauté for about 5-6 minutes until they are tender and slightly golden.

        Add Lemon: Toss in the lemon slices during the last minute of cooking for a fresh, bright flavor. Season with salt and pepper to taste.

          Plate the Dish: Once the chicken is done, allow it to rest for a few minutes. Serve the crispy Asado Chicken alongside the sautéed lemon zucchini, garnished with fresh parsley for a pop of color.
