Ingredients

4 large eggs

1 cup whole milk

1 cup all-purpose flour

1/2 teaspoon salt

1/4 cup unsalted butter (melted)

2 tablespoons granulated sugar

1 teaspoon vanilla extract

Powdered sugar (for serving)

Fresh berries (optional, for topping)

Lemon wedges (optional, for serving)

Instructions

Preheat your oven to 425°F (220°C). Place a cast-iron skillet or an oven-safe pan in the oven to heat up.

In a mixing bowl, whisk together the eggs, whole milk, and melted butter until well combined.

Slowly add the all-purpose flour, sugar, and salt to the wet ingredients. Mix until just combined—do not overmix, some lumps are okay.

Carefully remove the hot skillet from the oven. Pour the batter into the hot skillet, making sure it spreads evenly.

Return the skillet to the oven and bake for 20-25 minutes until the pancake is puffed and golden brown around the edges.

Once done, remove from the oven and sprinkle with powdered sugar. You can also top it with fresh berries and serve with lemon wedges if desired.

Slice the pancake into wedges and enjoy it warm!
