2 cups ripe peaches, peeled and diced

1 ½ cups all-purpose flour

1 cup packed brown sugar

½ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup buttermilk

Optional: powdered sugar for dusting, whipped cream for serving

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper for easy removal.

    In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes with an electric mixer.

      Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.

        In a separate bowl, sift together the flour, baking powder, baking soda, salt, and ground cinnamon.

          Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix.

            Gently fold in the diced peaches, reserving a few pieces to sprinkle on top of the batter.

              Pour the batter into the prepared cake pan, smoothing the top with a spatula. Arrange the reserved peach pieces on top.

                Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

                  Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Optional: Dust with powdered sugar before serving and pair with a dollop of whipped cream if desired.
