2 large carrots, grated

1 large apple (such as Granny Smith or Fuji), cored and diced

1/2 cup raisins or cranberries

1/4 cup walnuts or pecans, chopped

1/4 cup Greek yogurt

2 tablespoons honey

1 tablespoon lemon juice

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and diced apple. Toss them together gently to mix.
