1 cup rolled oats

2 cups almond milk (or milk of choice)

1 medium carrot, grated

1/4 cup crushed pineapple, drained

1/4 cup walnuts or pecans, chopped

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon vanilla extract

1 tablespoon maple syrup (or honey)

Pinch of salt

Cream cheese (optional topping)

Extra walnuts or coconut flakes (optional for garnish)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, crushed pineapple, cinnamon, nutmeg, and salt. Stir well to combine.

    Heat the mixture over medium heat, bringing it to a gentle boil while occasionally stirring.

      Once boiling, reduce the heat to low and simmer for about 5-7 minutes, or until the oats are cooked and have absorbed most of the liquid, stirring frequently.

        Remove from heat and stir in the vanilla extract, chopped walnuts, and maple syrup, adjusting sweetness to taste.

          Spoon the oatmeal into bowls and, if desired, add a dollop of cream cheese on top for a rich, creamy finish.

            Garnish with additional walnuts or coconut flakes, if desired.
