Ingredients
  

1 pound of bacon, chopped

4 medium potatoes, peeled and diced

1 small onion, diced

1 bell pepper, diced (any color)

1 cup shredded cheddar cheese

1 cup milk

4 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh chives or green onions, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 2 tablespoons of bacon grease in the skillet.

      Sauté Vegetables: In the same skillet with the bacon grease, add the diced potatoes, onion, and bell pepper. Season with salt, pepper, garlic powder, and paprika. Sauté for about 10-12 minutes, or until the potatoes are tender and golden, stirring occasionally.

        Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk. Add a pinch of salt and pepper, then stir in the crispy bacon and half of the shredded cheese.

          Combine Casserole: In a greased 9x13 inch baking dish, layer the sautéed potato mixture evenly. Pour the egg and bacon mixture over the potatoes. Sprinkle the remaining cheese on top.

            Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the eggs are set and the top is golden and bubbly.

              Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with fresh chives or green onions. Cut into squares and serve warm.
