Ingredients

1 can (15 oz) mixed beans (such as black beans, kidney beans, and chickpeas), rinsed and drained

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (adjust to taste)

1 teaspoon cumin powder

1 teaspoon garam masala

1/2 teaspoon smoked paprika

Salt, to taste

1 cup cherry tomatoes, halved

1/2 cup shredded sharp cheddar cheese (or any cheese of your choice)

4 slices of hearty whole grain or sourdough bread

Fresh coriander leaves, chopped, for garnish

Instructions

Prepare the Bean Mixture: In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes. Stir in the minced garlic and green chili, cooking for another minute until fragrant.

Spice it Up: Add the cumin powder, garam masala, and smoked paprika to the skillet. Mix well and sauté for another minute to enhance the flavors.

Combine Beans: Add the rinsed mixed beans and halved cherry tomatoes to the skillet. Season with salt, then gently fold the ingredients together. Cook on medium heat for about 5-7 minutes, stirring occasionally until the tomatoes soften and the mixture is heated through.

Cheesy Goodness: Lower the heat and sprinkle the shredded cheese over the bean mixture. Stir gently until the cheese melts and incorporates into the beans, creating a creamy consistency.

Toast the Bread: While the bean and cheese mixture is cooking, toast the slices of bread until golden and crispy.

Assemble and Serve: Place the toasted bread on plates and generously heap the cheesy masala beans over the top. Garnish with fresh coriander leaves.

Enjoy: Serve immediately while hot, optionally with a drizzle of sriracha or your favorite hot sauce for an extra kick!
