1 loaf of day-old bread (French or brioche works best)

4 large eggs

1 cup milk (whole or almond)

1/4 cup granulated sugar

2 teaspoons vanilla extract

2 teaspoons ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup packed brown sugar

1 tablespoon ground cinnamon (for topping)

1/4 cup powdered sugar (optional, for dusting)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray or line with paper liners.

    Prepare the bread: Cut the day-old bread into 1-inch cubes and set aside in a large mixing bowl.

      Make the egg mixture: In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, 2 teaspoons of cinnamon, and salt until well combined.
