Ingredients

4 cups cooked rotisserie chicken, shredded

1 cup uncooked orzo pasta

1 cup Greek yogurt

1 cup chicken broth

1 cup cherry tomatoes, halved

1 cucumber, diced

2 cloves garlic, minced

1 tsp dried dill

1 tsp lemon zest

1 tsp salt

½ tsp black pepper

1 cup crumbled feta cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Casserole: In a large mixing bowl, combine the shredded rotisserie chicken, uncooked orzo, Greek yogurt, chicken broth, halved cherry tomatoes, diced cucumber, minced garlic, dill, lemon zest, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it out evenly.

Add Feta Cheese: Sprinkle the crumbled feta cheese on top of the casserole mixture.

Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the orzo is tender and the top is golden.

Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
