1.5 lbs boneless, skinless chicken thighs

1 cup basmati rice

2 cups chicken broth

1 medium red onion, sliced

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 cup Greek yogurt

2 tablespoons fresh lemon juice

1 tablespoon fresh dill, chopped (or 1 tsp dried dill)

1 clove garlic, minced (for tzatziki)

Optional: fresh mint leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Dish: In a 9x13 inch baking dish, add the basmati rice and pour the chicken broth over it. Stir to combine.

      Season the Chicken: In a bowl, combine the olive oil, garlic powder, dried oregano, salt, and pepper. Rub this mixture over the chicken thighs on all sides.

        Layer the Ingredients: Place the seasoned chicken thighs on top of the rice in the baking dish. Scatter the sliced red onion and cherry tomatoes over the chicken.

          Bake: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 30 minutes.

            Prep the Tzatziki Sauce: While the chicken is baking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, lemon juice, minced garlic, diced cucumber, chopped dill, and additional salt and pepper to taste. Mix until well combined. Refrigerate until ready to serve.

              Finish Cooking: After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through (165°F or 75°C) and the rice is tender.

                Serve: Once cooked, remove from the oven and let it rest for a few minutes. Serve the chicken and rice topped with a generous dollop of tzatziki sauce. Garnish with fresh mint leaves if desired.
