Ingredients
  

2 large cucumbers, sliced into rounds

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini)

1/4 cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Optional: 1 teaspoon dried oregano for extra flavor

Instructions
 

Begin by washing the cucumbers and cherry tomatoes under cool water. Pat dry with a paper towel.

    Slice the cucumbers into thick rounds and place them in a large mixing bowl.

      Add the halved cherry tomatoes and mozzarella balls to the bowl with the cucumbers.

        Tear the fresh basil leaves and sprinkle them over the salad mixture.

          In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, salt, and pepper to create the dressing. Add the dried oregano if desired.

            Drizzle the dressing over the salad and gently toss to combine all ingredients without breaking the mozzarella balls.

              Taste for seasoning and adjust salt and pepper as needed.

                Allow the salad to sit for about 10 minutes at room temperature to let the flavors meld together.

                  Serve chilled or at room temperature, garnished with additional basil leaves if desired.
