12 oz (340g) pasta (penne or fusilli work well)

1 can (14 oz) diced tomatoes (with juices)

2 cups vegetable broth or chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 tsp dried oregano

½ tsp red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for sautéing

In a large pot or deep skillet, heat a couple of tablespoons of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.

    Add the minced garlic and red pepper flakes, stirring for another 1 minute until fragrant.

      Pour in the can of diced tomatoes (with their juices), vegetable broth, oregano, and pasta. Season with salt and pepper to taste. Stir everything together until combined.

        Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

          Once the pasta is cooked, lower the heat, and stir in the heavy cream and grated parmesan cheese. Mix until the sauce is creamy and well combined.

            Taste and adjust seasoning if necessary, adding more salt, pepper, or cheese as desired.
