1 lb ground beef (80/20)

8 small flour tortillas

1 cup shredded cheddar cheese

1 cup iceberg lettuce, shredded

1 large tomato, diced

1/2 cup pickles, sliced

1/4 cup diced onions (red or white)

1/4 cup mayonnaise

1 tablespoon mustard

1 tablespoon ketchup

Salt and pepper, to taste

Cooking oil for the pan

Instructions
 

Prepare the Sauce: In a small bowl, mix together the mayonnaise, mustard, and ketchup until well combined. Set aside.

    Cook the Beef: Heat a large skillet over medium-high heat and add a splash of cooking oil. Take the ground beef and form it into loose balls (about the size of a golf ball).

      Smash the Burgers: Once the skillet is hot, place the beef balls in the skillet, leaving space between each. Using a spatula, smash each ball down into a thin patty, pressing firmly. Season with salt and pepper.

        Cook to Perfection: Let the patties cook for about 2-3 minutes on one side until brown and crispy. Flip the patties and cook for an additional 1-2 minutes. While they are cooking on the second side, sprinkle cheese on top so it can melt.

          Warm the Tortillas: In a separate skillet, warm the flour tortillas over medium heat for about 30 seconds on each side, or until they are pliable.

            Assemble the Tacos: Place a cheesy smash burger patty on each tortilla. Top with shredded lettuce, diced tomatoes, sliced pickles, and onions. Drizzle a spoonful of the prepared sauce over the top.
