Ingredients

1 pound chicken breast, diced

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 pound potato gnocchi (store-bought or homemade)

2 cups fresh spinach

1 cup cherry tomatoes, halved

1/2 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breast, season with salt, pepper, Italian seasoning, and red pepper flakes if using. Cook until the chicken is golden brown and fully cooked, about 8-10 minutes. Remove the chicken from the skillet and set aside.

Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add in the halved cherry tomatoes and sauté for another 2-3 minutes until they start to soften.

Cook Gnocchi: Add the potato gnocchi to the skillet, and pour in the chicken broth. Stir gently to combine. Bring to a simmer and cook for about 3-4 minutes or until the gnocchi floats to the top.

Add Cream and Greens: Reduce the heat to low and stir in the heavy cream and fresh spinach. Cook for another 2-3 minutes until the spinach is wilted and the sauce has slightly thickened.

Combine Ingredients: Return the cooked chicken to the skillet, and gently stir everything together. Incorporate the grated Parmesan cheese, and let it simmer for another minute. Taste and adjust the seasoning with more salt and pepper if necessary.

Serve: Serve hot, garnished with fresh basil if desired. Enjoy your creamy and flavorful garlic chicken gnocchi skillet!
