Greek Style Loaded Hummus

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil, plus more for drizzling

2 tablespoons lemon juice

1-2 cloves garlic, minced

1 teaspoon ground cumin

Salt, to taste

1/2 cup Greek yogurt

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/2 cup Kalamata olives, pitted and sliced

1/4 cup red onion, finely chopped

1/4 cup crumbled feta cheese

Fresh parsley or oregano, for garnish

Pita chips or fresh pita bread, for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and a pinch of salt. Process until smooth and creamy, scraping down the sides as needed. If it's too thick, add a little water, one tablespoon at a time, until your desired consistency is reached.

    Transfer the hummus to a serving dish and create a shallow well in the center.

      In a separate bowl, mix together the Greek yogurt and a splash of olive oil. Spread the yogurt mixture over the hummus in the well.

        Top the hummus with the halved cherry tomatoes, diced cucumber, sliced olives, chopped red onion, and crumbled feta cheese.

          Drizzle olive oil over the top and garnish with fresh parsley or oregano.

            Serve with pita chips or fresh pita bread for dipping.
