Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce

Ingredients
  

2 boneless, skinless chicken breasts

2 cups broccoli florets

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon paprika

1 cup cooked brown rice or quinoa

¼ cup grated Parmesan cheese (optional)

For the Creamy Garlic Sauce:

½ cup Greek yogurt

2 tablespoons mayonnaise

3 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Marinate the Chicken: In a shallow bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let it sit for at least 30 minutes (or longer if time permits).

    Prepare the Grill: Preheat your grill or grill pan over medium-high heat.

      Cook the Chicken: Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F or 75°C). Remove from the grill and let it rest for a few minutes before slicing into strips.

        Blanch the Broccoli: While the chicken is cooking, bring a small pot of salted water to a boil. Add the broccoli florets and cook for about 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Drain again and set aside.

          Make the Creamy Garlic Sauce: In a mixing bowl, combine Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix until smooth and adjust seasoning to taste.

            Assemble the Bowls: In serving bowls, layer the cooked brown rice or quinoa on the bottom. Top with sliced grilled chicken and blanched broccoli florets.
