2 cups cooked shredded chicken (rotisserie or homemade)

1 cup black beans, drained and rinsed

1 cup low-fat cottage cheese

1 cup enchilada sauce (store-bought or homemade)

6 whole wheat tortillas

1 cup shredded low-fat cheese (such as cheddar or Mexican blend)

1 tablespoon cumin (optional, for extra flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mix the Filling: In a large mixing bowl, combine the shredded chicken, black beans, cottage cheese, and cumin (if using). Stir until well combined.
