1 pound ground beef

4 medium potatoes, peeled and sliced thin

1 large onion, chopped

2 cups mixed vegetables (frozen or fresh, such as corn, peas, and carrots)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Olive oil (for sautéing)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Ground Beef: In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.

      Sauté Onions: Add the chopped onion to the skillet with the ground beef and sauté until the onion is translucent, about 3-4 minutes.

        Mix Ingredients: In a large bowl, combine the cooked beef and onions, mixed vegetables, cream of mushroom soup, garlic powder, paprika, salt, and pepper. Mix well until combined.

          Layer Potatoes: In a greased 9x13 inch baking dish, layer half of the sliced potatoes at the bottom. Sprinkle with a pinch of salt and pepper.

            Add Meat Mixture: Spread half of the beef and vegetable mix over the layer of potatoes. Repeat with another layer of potatoes followed by the remaining beef mixture.

              Top with Cheese: Finish with the last layer of sliced potatoes and sprinkle the top with shredded cheddar cheese.

                Cover and Bake: Cover the dish tightly with aluminum foil and bake for 40 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
