Ingredients

1.5 lbs boneless, skinless chicken thighs

1/3 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon sesame oil

Salt and pepper, to taste

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for thickening)

Sliced green onions and sesame seeds, for garnish

Instructions

Marinate the Chicken: In a large bowl, whisk together the honey, soy sauce, minced garlic, minced ginger, olive oil, apple cider vinegar, sesame oil, salt, and pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C).

Bake the Chicken: Place the marinated chicken thighs in a baking dish, ensuring they are evenly spaced. Reserve the marinade for later use. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Prepare the Sauce: While the chicken is baking, pour the reserved marinade into a small saucepan. Bring to a simmer over medium heat and cook for about 5-7 minutes, stirring frequently. If you prefer a thicker sauce, mix the cornstarch with the water in a small bowl, then slowly whisk it into the simmering sauce until thickened.

Glaze the Chicken: Once the chicken is done, remove it from the oven and brush the thickened sauce over each piece. Return the chicken to the oven for an additional 5 minutes to let the glaze caramelize slightly.

Garnish and Serve: Remove the chicken from the oven, let it rest for a few minutes, then slice it. Drizzle with any remaining sauce, and garnish with sliced green onions and sesame seeds. Serve with steamed rice or veggies.
