Ingredients

4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 cup cherry tomatoes, halved

1 cup orzo pasta

4 cups chicken broth

1 cup spinach, chopped

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions

Season and Sear Chicken: Season the chicken thighs with salt and pepper. In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the seasoned chicken to the pan and sear until golden brown, about 5-6 minutes per side. Remove the chicken and set aside.

Sauté Aromatics: In the same pan, add the minced garlic, dried oregano, and smoked paprika. Sauté for about 1 minute, until fragrant.

Add Vegetables: Stir in the cherry tomatoes and cook for another 2-3 minutes until they begin to soften.

Cook Orzo: Add the orzo to the pan and stir to combine with the vegetables. Pour in the chicken broth and bring the mixture to a simmer.

Combine Chicken and Simmer: Return the chicken thighs to the pan, nestling them into the orzo. Cover the pan with a lid and let it simmer for about 15-20 minutes, or until the orzo is tender and has absorbed most of the liquid.

Finish Up: Once the orzo is cooked, stir in the chopped spinach, heavy cream, and grated Parmesan cheese, mixing until the spinach wilts and everything is creamy and well-combined.

Serve and Garnish: Taste and adjust the seasoning if necessary. Serve the dish hot, garnished with fresh basil for an aromatic finish.
