Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

2-3 fresh jalapenos, thinly sliced (remove seeds for less heat)

1 cup shredded pepper jack cheese

Salt and black pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Marinate the Chicken: In a small bowl, combine olive oil, smoked paprika, cumin, garlic powder, onion powder, chili powder, cayenne pepper, salt, and black pepper. Rub the mixture all over the chicken breasts and let it marinate for at least 30 minutes (or overnight for more flavor).

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Chicken: Heat a large oven-safe skillet over medium-high heat. Once hot, add a drizzle of olive oil. Place the marinated chicken breasts into the skillet, searing them for about 4-5 minutes on each side until golden brown.

Add Jalapenos: Once seared, add the sliced jalapenos directly onto the chicken in the skillet.

Top with Cheese: Sprinkle the shredded pepper jack cheese generously over the chicken and jalapenos.

Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F, 74°C) and the cheese is bubbly and slightly golden.

Garnish and Serve: Remove from the oven and let the chicken rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges on the side.
