Ingredients

2 cups fresh strawberries, hulled and sliced

2 cups fresh peaches, peeled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/2 cup packed brown sugar

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Fruit: In a large mixing bowl, combine the sliced strawberries and peaches. Add the granulated sugar, lemon juice, cornstarch, and vanilla extract, then gently toss until the fruit is well coated.

Make the Crisp Topping: In another bowl, mix the rolled oats, all-purpose flour, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until all the dry ingredients are evenly moistened and crumbly.

Assemble the Crisp: Spread the fruit mixture evenly in a greased 9x13 inch baking dish. Sprinkle the oatmeal topping over the fruit layer, ensuring it covers the fruit evenly.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.

Cool & Serve: Once baked, allow the crisp to cool for about 10 minutes before serving. This dish is fantastic served warm with a scoop of vanilla ice cream or a dollop of whipped cream!
