Summer Corn and Zucchini Chowder

Ingredients
  

4 ears of fresh corn, kernels removed

2 medium zucchinis, diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream or coconut milk for a dairy-free option

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh basil or parsley for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced zucchini to the pot and sauté for 3-4 minutes until they begin to soften.

        Stir in the fresh corn kernels, vegetable broth, dried thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.

          Reduce the heat and let it simmer for about 15-20 minutes until the zucchini and corn are tender.

            If desired, use an immersion blender to blend part of the chowder for a creamier texture while leaving some whole pieces for bite.

              Stir in the heavy cream or coconut milk and heat through for another 5 minutes, adjusting seasoning as necessary.

                Serve the chowder hot, garnished with fresh basil or parsley.
