Ingredients
  

2 cups cooked chicken, chopped (grilled or rotisserie)

1 cup romaine lettuce, chopped

1 cup red cabbage, shredded

1 cup cherry tomatoes, halved

1 cup corn (canned or frozen, thawed)

1 small red onion, finely diced

1 cup black beans, rinsed and drained

1 avocado, diced

½ cup cilantro, chopped

1 cup shredded cheddar cheese

½ cup tortilla strips (for crunch)

Juice of 2 limes

¼ cup olive oil

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the chopped chicken, romaine lettuce, red cabbage, cherry tomatoes, corn, red onion, black beans, avocado, and cilantro.

    In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until well combined to create the dressing.
