Ingredients

1 1/2 cups Oreo cookie crumbs (about 15 cookies)

4 tablespoons unsalted butter, melted

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream (store-bought or homemade)

6 Oreos, chopped (for topping)

Optional: extra melted chocolate for drizzling

Instructions

Prepare Crust: In a medium bowl, mix the Oreo cookie crumbs with the melted butter until the mixture resembles wet sand. Press this mixture firmly into the bottom of a lined mini muffin tin. Use your fingers or the back of a spoon to ensure an even layer. Refrigerate for 10 minutes to set.

Make Cheesecake Filling: In a separate mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

Fold in Whipped Cream: Gently fold the whipped cream into the cream cheese mixture until everything is evenly incorporated. Be careful not to deflate the whipped cream too much; you want the filling to remain light and fluffy.

Assemble Bites: Remove the mini muffin tin from the fridge. Spoon the cheesecake filling over the chilled crust, filling each cup almost to the top. Tap the tin lightly on the counter to remove air bubbles.

Add Toppings: Sprinkle the chopped Oreos on top of each cheesecake bite for added texture and taste. If desired, drizzle with melted chocolate for an extra special touch.

Chill: Place the mini muffin tin back in the refrigerator for at least 15 minutes to allow the cheesecake bites to set and become firm.

Serve: Once chilled, remove the Oreo cheesecake bites from the muffin tin and enjoy! These can be stored in the fridge for up to 3 days.
